You can try to unmanage and remanage on of the nodes that's not collecting and see if that jump starts anything. The snmpwalk is just going to show that SNMP data can be pulled from the server, but not that the system would be polling it. If the unmanage fails, then I'd go back to support and ask if they found anything in the collector logs showing any issues with the polling. I don't see why they would suggest a rollback of the server prior to patching. I doubt there was a patch released by Windows that would have caused this.
